INGREDIENTS:
-1 avocado
-1 red bell pepper
-1/2 purple onion
-1/2 jicima
-3 roma tomatoes
-4 celery stocks
-1 cucumber
-1 head romaine lettuce
-2 cups watermelon, cubed
-1 cup feta cheese
-1/4 c. apple cider vinegar
-2 limes
-2 tbsp fresh minced garlic
-1/4 c. extra virgin olive oil
DIRECTIONS:
-slice bell pepper, onion, jicima, tomatoes, celery, and cucumber and put in big salad bowl.
-slice romaine lettuce and add to salad bowl.
-add vinegar, EVOO, minced garlic and squeeze limes
-Toss salad really well until all ingredients are coated with dressing.
-Serve salad in bowls, top off with 1/4 avocado, 1/2 c. watermelon and 1/4 c. feta cheese
