5 Hot House Cucumbers
1 cup non fat cream cheese
16 oz ahi (sushi grade) tuna
1 tbsp fresh garlic
1 tbsp fresh ginger
2 cups bean sprouts
1/4 c. avocado
1/4 c. low sodium soy sauce
directions:
1. using a slicer or a very sharp knife, cut cucumbers lengthwise very thin and set aside. Dice tuna into bite size pieces.
2. In a large bowl, mix tuna, soy sauce, ginger, and garlic. Lay out cucumber slices, spread non fat cream cheese and add tuna mix.
3. add bean sprouts and avocado to each cucumber roll and roll up gently!
4. Continue making cucumber rolls until all ungredients are used up.
