Thai Lemon Chicken
Ingredients:
1/4 cup unsalted peanuts
1 Tbsp. garlic powder
1 tsp. ground ginger
1/4 lb. boneless, skinless chicken breast
Juice of one lemon
2 egg whites
Preparation:
Preheat oven to 375 degrees.Grind peanuts in a food processor until finely ground. In a small bowl, combine peanuts, garlic powder, and ginger. In a separate bowl mix lemon with egg whites. Coat chicken in egg whites, roll chicken in peanut mixture until well coated. Place on cookie sheet sprayed with non stick spray and bake chicken in oven for 25 minutes or until no longer pink.
