Ingredients
5 medium plum tomatoes,seeded and thinly sliced
1/4 red onion, peeled, halved lengthwise and thinly sliced
2 cucumberq, halved lengthwise and thinly sliced
1 can artichoke hearts
2 tablespoons extra virgin olive oil
2 splashes red wine vinegar
Coarse salt and black pepper
2 tbsp fennel seed
Preparation
Dress the tomatoes, onions artichoke hearts and cucumber with EVOO (a generous drizzle), red wine vinegar, fennel seed, salt and pepper.
Let stand about 20 minutes. Toss and serve salad with your favorite serving of lean protein.
