INGREDIENTS:
-3 medium red onions
-2 tablespoons olive oil
-2 tablespoons balsamic vinegar
-1 tbsp cayenne pepper
-black pepper to taste
-1 lbs fresh green beans, trimmed
DIRECTIONS:
-Preheat oven to 400 degrees.
-Peel onions and cut into lengthwise quarters.
-Toss onions with 1 tbsp of vinegar, 1 tbsp olive oil, cayenne, and pepper.
-Place on a baking sheet lightly coated with cooking spray. Roast onions until golden brown.
-Place green beans into covered dish and microwave until tender, 4-5 minutes.
-Combine roasted onions with steamed green beans, toss with 1 additional tbsp olive oil and return to oven.
-Place oven on Broil and broil until golden brown on top (5-10 minutes).
