1 baby bok choy, cut
2 tbsp olive oil
1 clove garlic
1/2 tsp curry powder
1/4 tsp curry powder
pinch of cinnamon
1 cup cooked brown rice
1/2 cup black beans, rinsed and drained
2 oz cooked salmon

Toss bok choy with 1 tbsp olive oil. Grill for about 3-5 minutes on each side.

saute curry, cumin, cinnamon, cooked brown rice, balck beans, and salmon in remaining 1 tbsp olive oil.

Serve grilled bok choy on rice, beans and salmon mixture.
