INGREDIENTS:
4 oz cooked shrimp
1/4 c. cooked quinoa
1/2 red onion, diced
1/2 c. mushrooms, diced
1/4 c. green onions, finely diced
1/2 c. celery, diced
2 cloves garlic, minced
1 tbsp sesame oil
1 tbsp sesame seeds
DIRECTIONS:
-In saute pan, add sesame oil and allow to warm.
-Add red onions, mushrooms, green onions, celery and minced garlic and allow to cook until vegetables are softened and slightly golden.
-Add quinoa and shrimp to the mixture and continue to saute for about 3-4 minutes.
-Remove from saute pan and add sesame seeds.
