Ingredients:
-3/4 cup Stevia in the Raw
-1/4 cup unsweetened applesauce
-1 whole egg
-3 egg whites
-3/4 cup pure canned pumpkin
-1/4 cup unsweetened coconut milk
-3/4 cup whole grain oat flour
-3/4 cup almond flour
-1/2 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp fresh ground cinnamon
-1/4 tsp salt
-1/2 tsp ground nutmeg
-1/2 cup pumpkin seeds, finely chopped
Directions:
-Preheat oven to 400 degrees. Place paper liners in muffin pan.
-Mix Sugar In the Raw, applesauce and eggs together in a medium bowl. Add pumpkin and coconut milk. In a separate bowl mix together the flours, baking soda, baking powder, spices and salt. Add wet mixture to dry ingredients and mix just until
combined. Stir in pumpkin seeds.
-Fill muffin cups 2/3 full with batter. Bake in preheated oven until completely cooked.
