INGREDIENTS:
-1 cup almond meal
-1 1/2 cup liquid egg whites
-2 heaping tsp coconut oil
-1/2 cup pumpkin seeds
-1/4 cup Goji Berries
-1/2 tsp baking powder
-2 scoops Vanilla Protein Powder
-3-4 packets stevia
-2 sheets Nori
-nonstick cooking spray
DIRECTIONS:
-Preheat oven to 370 degrees F and spray muffin pan with non stick cooking spray, such as Pam.
-In blender or food processor, add all ingredients and blend until smooth, creamy and fully mixed.
-Pour batter evenly into muffin tin and place in the oven for approximately 15-20 minutes.
-Remove from oven and allow to cool.
