Aha! Now I think I know why your recipes turn out a little drier for me. My protein powder scoop is 1/3 of a cup instead of 1/4. May add a little to the dryness. I made this and it was a little dry so next time I’ll use a little less protein powder. Still very easy though and super quick! Awesome.
Erin- You are absolutely right… It is all about the protein powder you use so you can try a few things
-use a touch less protein
-use a different protein
-add a touch of water
-add a few tbsp of no sugar added apple sauce
-add a few tbsp of low or no fat cottage cheese
-add an extra egg white
–try cooking on lower heat for a longer time (slower cooking)
Try those… A lot of the time it is trial and error with the proportions, depending on the consistency you prefer and also everyone’s stove cooks different….
You’ll get it!

I know you’re right because I had to do the same thing with the apple fritter muffins. I finally got those figured out and they were so delicious when I finally got it. In those I ended up using some yogurt and that seemed to make it moist enough for my liking. Thanks for the tips Gina! I won’t give up! π It took me 3 times with the apple fritters! When it comes to food, I don’t give up! LOL!!!
Yes, Yogurt is always another option (like the cottage cheese) Keep trying and let me know when you get the best proportions. No giving up when it comes to food, I hear you on that! π

I have to confess. I am addicted to the pancakes!
I am never hungry for breakfast, usually. I never have time for it, usually. I have to force myself to eat, usually.
This week, I have been cooking these pancake EVERY MORNING like a mad woman π
I am so excited, this is a good addiction!!! Breakfast is the most important meal of the day! Kick starts your metabolism, I am so happy you are eating it now! This alone will help you with your weight loss goals! This is an addiction you can hold on too! π Try them with berries too! π I made them with berries, last night and made them in my muffin tins to last me for my post workout meal for the rest of the week! Delicious!! π

I have a non-fitness related question–where did you get the hip purse that you are wearing in the video! I need something like that!
of course, all non fitness related questions are welcome too!!! Oh yes, I was a lucky girl two years ago when Michael got me that Gucci Fanni Pack for Christmas. You don’t have to go that far though, you can get them from Coach, I have one from Lululemon too that is all black (more sporty looking). Ebay has them too so you may be able to get a deal on one. π It is super cute and great when you don’t want to lug around a purse. I use it when I walk Bruno too…. hold just what I need, including bones, etc. π
