2 medium whole zucchini
2 egg whites
1 1/2 cups ground oatmeal
1/2 cup grated low fat cheese (of choice)
2 tablespoons extra virgin olive oil
1 tbsp garlic powder
Salt & pepper

Preparation
Grind up oatmeal until fine.

Slice the zucchini into 1/4 inch rounds and set aside.

In one bowl, lightly beat the egg whites and add garlic powder and salt and pepper.

In another bowl, mix the ground oatmeal and low fat cheese.

Put a large skillet on the stove on medium heat. Add the Extra virgin olive oil and while it heats, dip each slice of zucchini in the egg whites wash and then the ground oatmeal/cheese mixture and then into the pan. Fill the pan with zucchini slices and let brown for a few minutes, then flip to the other side. Let brown and pull each slice off the pan and place onto a plate lined with paper towel to drain a bit.
