Ingredients:
Bake any of your favorite protein muffins– (see recipe section)
1 1/2 cups Grape Nuts cereal
1/4 cup egg whites
1/4 cup no-sugar-added applesauce
3 tbsp. Splenda or Stevia
1 tbsp. cinnamon
1/2 tsp vanilla extract
Directions:
Bake Muffins as Directed and Remove from oven after 3/4 way cooked. While muffins are baking,
blender or use food processor to grind Grape Nuts into a breadcrumb-like consistency. Transfer crumbs to a dish, and add all other topping ingredients. Stir well, until mixture is completely mixed and crumbly. Set aside.
Remove from oven muffins from oven and evenly top each cake with crumb mixture. You may need to use to fingers to help form the crumbs. Lightly press crumbs into cake tops so they stick. Return pan to the oven, and bake for 5 minutes longer. Allow to cool before removing cakes from the pan.
