The day unfolded nicely with clients, work, and Yoga! Yes, Monday and already got my weekly goal done! Had an amazing hot yoga class to finish off my day! Prefect balance of workout, 1 mile run, dog walks, yoga and work!! I also was able to FINALLY try Rhubarb. Thanks to Erin who brought me some this past weekend. Can you believe it, I couldn’t get it anywhere in SD so Erin had to bring me some in Anaheim!! Thanks again Erin! I chopped it up and put it in my crockpot with Stevia and allowed it to cook on low for 6 hours. I finally tried it and it was yummy!!! What I did was simply eat it in its pieces and then used the liquid that it made for the liquid in my vanilla protein shake. It was a rhubarb vanilla shake with a side of rhubarb! π

Meal today were as follows:
Meal 1: shake and oats with chia seed
Meal 2: apple with tilapia and 2 rice cakes (yes tilapia in the a.m. but it was left over from the weekend so quickly grabbed it before heading out the door this a.m.)
Meal 3: Rhubarb and Protein shake
Meal 4: 6 egg whites omelet with 2 rice cakes (before Yoga)
Meal 5: Quest Bar (post yoga)
Meal 6: Gina Salad with Green Beans and 5 oz chicken breast
Meal 7: Shake and 1 tbsp Flaxseed
SO yesterday, have to admit, my nut butter friends, I had some loving with the Nut butter. Had 2 servings of the Juilian Bread Sweet Egg French Toast smothered in Nut butter (minus the apples). It was heaven and let me tell you, Jess and My workout this morning was strong! Thank you Nut butter for a strong and happy workout!!

We study about how to create success in order to change circumstance in our lives. In order to do that the real goal is to change what you are currently doing. After all if you continue to do what you have been doing, then how can anything ever change?
If you want to lose weight, but continue to eat and exercise like you always have, you are not going to lose weight. If you want to have more money, but continue to earn and spend the same, once again your circumstances will not change. The same holds true with your relationship life, if you approach it the same way nothing will change.

I loved this and its so funny that this was the ended thought. a few days ago a friend of mine (old) friend that i dont talk to anymore was complaining of her life…weight, relationships, job, ect; she asked me how did i stay so fit and happy no matter what curve balls life throws?? I said simply if you want your life to change, you cannot continue to do the same things!! do something diffrerent!! xoxo have a great day!

If you don’t have a crockpot, how else can you cook the rhubarb? I bought some this week for the first time ever! No idea what it even tastes like. Looking forward to trying!

oh Lucy, First of all you MUST get a crock pot! Especially as you continue on this journey!!! It will make your life so much easier, set it and forget it π
No fear, without a crock pot, this is how you prepare the rhubarb:
-Wash the stalks and cut off the ends at the base and near the leaves.
-Cut rhubarb stalks into small pieces.
-Place the rhubarb and spices (for sweet, add no calorie sweetener) into a saucepan. Pour in a little water to cover the rhubarb.
-Cover the saucepan. Cook over a low heat for approximately 10 minutes. Stir the contents occasionally to prevent sticking. You will know the rhubarb is done when it becomes mushy and rhubarb strings are apparent throughout the mixture.
-Remove from the heat and allow to cool.
-Strain off excess liquid. This liquid can be used to make a shake :).
