MODIFIED PROTEIN ZUCCHINI BREAD
INGREDIENTS
3-4 egg whites
1/2 cups splenda sugar
1 cups grated zucchini
1 teaspoons vanilla extract
1 scoop vanilla protein powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt (optional)
1/2 cup chopped walnuts (optional)
1/2 cup oatmeal (optional)
** Use judgement and add a touch of water if necessary
Preheat oven to 325 degrees F ( 165 degrees C). PAM loaf pan
In a large bowl, beat egg whites until light and frothy. Mix in Splenda. Stir in zucchini and vanilla. Combine oatmeal**, cinnamon, soda, baking powder, salt** and nuts**; stir into the egg mixture. Sprinkle extra touch of Splenda on top and Bake until done. Should be golden brown on top before removing from oven!
