low carb veggie pizza
12 oz. egg whites
2 tbs. rice bran
½ cup pasta sauce of choice
4 oz. low fat Mozzarella cheese (shredded)
1 small tomato (sliced)
mixed veggies of your choice, cubed
Mix in a medium bowl the crust ingredients and pour into a medium heat, non-stick skillet coated lightly with olive oil. Cook one side until whites are very firm. Flip the crust in the pan and cook the opposite side until lightly browned then slide onto a plate to cool.
Pour pasta sauce on the previously prepared crust and spread evenly with a spoon. Cover sauce with cheese, tomato slices, and veggie slices. Heat in a toaster oven heated to 400 degrees Fahrenheit for 3-5 minutes, or place in a microwave for 60-90 seconds until cheese melts. Let cool slightly, cut, and serve.
