Good Morning and Happy Cinco De Mayo!! The day that commemorates the victory of the Mexican militia over the French army at The Battle Of Puebla in 1862!! Any special diet friendly Cinco De Mayo Mexican dishes on the menu today??? I am going to post a video today of one of my super simple and tasty dishes 😉
People think that Mexican Food is the way to break a diet but let me tell you, I think Mexican is the easiest to modify and enjoy, diet friendly! You can do so much with Salsa! Use it as your sauce over a plain grilled chicken breast or piece of fish or simply use it as salad dressing! Between the salsa, cilantro and lime, you can have yourself quite a healthy meal!! A few great option are:
-BIG salad with grilled fish, chicken or shrimp– removing cheese and tortilla strips and using salsa, cilantro and lime as your dressing. Stay away from the big ol Tostada Salad in the Giant Chip Bowl!!
-Avocado is one of our favorite sources of fat so is a great option to have with your salad or any entree but be sure to only have a serving!
Sometimes, I even bring my own protein and place it on the big salad with salsa, lime and cilantro. That way I know the protein is clean … In that case you are totally diet friendly!! Where there is a will, there is a way!
Always opt for black beans, and when not available, hold off refried beans and the rice!
Always go for Corn Tortillas over Flour, if you are having carbs.
Another great option is to order Ceviche OR Shrimp Cocktail! My favorite is Ceviche, when it is available! Ceviche is a citris-marinated seafood dish that has several variations. It basically is a a concoction of seafood from Shrimp, octopus, squid, white fishes, etc. and is marinaded in ingredients such as salt, lime, onion, chile, avocado, and coriander or cilantro with Tomatoes added in.
SO you may be a bit higher on the salt, when going out to eat but as far as nutrients go, you can definitely find something that works for you!!
