Ingredients:
1 1/2 cups oat flour
1 tsp baking powder
4 tbsp splenda or Stevia (sugar substitute)
1/2 tsp groud cinamon or pumpkin pie spice
8 egg whites
1 cup fat free cottage cheese
1 scoop protein powder
1/4 c. water
PAM Cooking Spray
-combine first four ingredients in a medium bowl. Make a well in the center.
-Combine eggs, cottage cheese, protein powder and water in a small bowl. Pour into well. Stir until moistened.
-Heat a nonstick pan or prepare a skillet with cooking spray. Heat should be medium high. Use 1/4 cup of batter for each pancake. Cook until lightly brown on both sides. Keep watm in oven until all pancakes are prepared.
** Can be served with fruit, sugar free syrup, or even spread peanut or almond butter for a nice nutty flavor.
