Ingredients
-2 cups (packed) grated zucchini
2 egg whites
1/2 c. oat flour + 1 tbsp for pan
-1/4 c. low fat grated mozzarella
-1/4 c. low fat parmesan
-2 tbsp olive oil
-2 tbsp EVOO for pie pan
-1 tbsp basil
Directions:
*Preheat the oven to 400 degrees F. Drizzle EVOO in a 10 inch pie pan and coat lightly with 1 tbsp oat flour.
*Combine zucchini, egg whites, flour, cheeses, herbs and 1 tbsp olive oil.
*Spread into the prepared pan and bake for 35-40 minutes or until golden brown.
–about 1/2 way through the baking, brush crust with remaining 1 tbsp EVOO–
*When done cooking, remove from oven and allow crust to cool for about 10 minutes. Use a spatula to loosen the crust from the pan.
*Top with your favorite pizza toppings and bake until cooked!
