1 large red bell pepper, cut into bite size pieces
1 large green bell pepper, cut into bite size pieces
2 medium zucchini, cut into thick pieces
2 cups white mushrooms
1 large red onion, cut into thick pieces
2 tbsp olive oil
4 tbsp fresh lime juice
16 oz chicken breasts, cut into cubes
1 tsp fresh grated ginger
1 tsp tumeric
pepper to taste
1. combine vegetables in large ziplock bag. In small bowl, combine chicken, oil, lime juice, ginger, tumeric and pepper and add to vegetables. Seal and shake bag. Place into refrigerator and allow to marinate over night.
2. The following day… Preheat grill. Thread vegetables and chicken onto 2 skewers.
3. Grill chicken and veggies 10-12 minutes or until chicken is cooked through. Serve hot and place over brown or wild rice and enjoy!!
