1/4 c. olive oil
16 oz lean ground pork
3 tbsp fresh ginger, minced
3 tbsp fresh garlic, minced
1 red onion, diced
1 bunch green onions, diced
1/4 c. low sodium soy sauce
3/4 c. lime juice
pepper to taste
Leaves of butter leave lettuce
1 large apple, diced
directions:
Heat skillet and use non stick cooking spray to cook ground pork. Cook meat until completely cooked all the way through.  Mix in olive oil, ginger, garlic, onions, soy sauce, lime juice and pepper.  Saute for a few minutes until onions are cooked.  Add apples and stir to mix.  Remove from heat and set aside in bowl.
Serve with butter leaf lettuce cups and enjoy! 🙂
