INGREDIENTS:
-4 oz tilapia fillet
-3 cups fresh spinach
-1 head cauliflower
-1 tbsp fresh minced garlic
-2 tbsp EVOO
-1 tbsp parsley flakes
-pepper to taste
DIRECTIONS:
-saute spinach over stove top with 1 tbsp EVOO. Allow to cook down. Add parsley and mixed garlic and allow to saute.
-Steam or place cauliflower in microwave for 10-15 minutes, until fully cooked.
-use fork to lightly mash cauliflower and add to garlic spinach mix.
-add remaining EVOO and pepper. Saute until mixed well. Place cooked spinach aside.
-Use left over EVOO in the pan to cook Tilapia, using spatula to separate fillet.
-Once fully cooked, add back in spinach saute and mix well.
Serve and enjoy!
I tried this dish last night. I absolutely love it! To be honest, I never thought of putting cauliflower and spinach together in one dish, but I have to say it works remarkably well.

This is super simple and Yes, spinach is one of those things that goes great in several different meals from a shake to an omelet to a salad to a saute! 🙂
