INGREDIENTS:

  • -3 firm bananas
  • -1/3 cup nut butter
  • -1/3 cup >70% dark chocolate
  • -1-2 cups grated unsweetened coconut
  • -1 tsp coconut oil
DIRECTIONS:
  • -Line pan with parchment paper
  • -Cut bananas into 1 inch sections, about 8 per banana.
  • -Place grated coconut on plate and set aside.
  • -Melt coconut oil, nut butter and chocolate over stovetop on medium-low heat.
  • -Individually, dip bananas in melted nut butter chocolate mixture and roll in grated coconut.
  • -Place on wax paper and freeze for 2-4 hours.
  • -If frozen solid, remove from freezer for a few minutes before serving.
  • Serving size: approximately 24 bites out of 3 bananas
