PB Chocolate Bread Pudding
Ingredients:
2 slices Ezekiel bread, lightly toasted and cut into 1/2″ cubes
1/2 cup non fat cottage cheese OR water for a lighter flavor
1.5 scoop chocolate protein powder
1/3 cup egg whites
2 tbsp peanut butter
2 tbsp. Splenda or Truvia
fat-free whipped topping
Directions:
Preheat oven to 350 degrees.
Place toasted bread cubes in a 1-quart baking dish sprayed with nonstick spray.
In a blender, combine water (or cottage cheese), egg substitute, peanut butter and sweetener. Process at medium speed until smooth. Pour mixture over bread cubes, making sure all the bread cubes are covered. Let stand for 5 minutes.
Place dish in the oven, and bake for 45 – 50 minutes (until pudding is firm).
Best when served warm. If you like, add some non fat whipped topping and serve!!
