1 ezekiel tortilla
1/4 c. non fat cottage cheese
1 tsp olive oil
1 red bell pepper, roasted and seeds removed
2 oz cooked chicken breast, diced
1/4 c. mixed greens
1/2 red onion, sliced and diced
1 medium tomato, sliced and diced
1 tbsp roasted soy nuts
Directions:
1. In a blender, mix cottage cheese and olive oil until creamy.
2. Lay tortilla flat and spread cottage cheese mix over the tortilla.
3. Layer with red pepper, mixed greens, onion and tomato.
4. Add chicken breast and soy nuts.
5. Gently roll into Burrito type wrap and enjoy!
The soy nuts are great because they add a great taste and crunch but you can also replace these with ANY of your favorite nuts.
