1 cup quinoa
1 cup chicken broth
2 cups water
Follow directions on package
Butternut Squash 1 small peeled and chopped into cubes
1 small onion chopped
Sea salt and pepper
1 tbsp olive oil
Roast at 425 degrees 30 minutes
Once completed add your squash and onion to quinoa and mix.
To top this off toast 1/2 cup walnuts add to the batch for some crunch!
