CABBAGE CHICKEN PEANUT WRAPS (AS SEEN IN VIDEO)
Ingredients:
-shredded or diced chicken, cooked
-1 cucumber, diced
-1 tomatoe, diced
-8 white mushrooms, diced
-1 head of cabbage
-1/2 stock celery
-1 purple onion
-t tbsp minced garlic
-1 lime
-2 tbsp oregano
-pepper, to taste
-2 tbsp natural peanut butter
-2 tbsp low sodium soy sauce
PEANUT SAUCE:
-ADD PEANUT BUTTER AND SOY SAUCE TOGETHER, NUKE IN THE MICROWAVE FOR ABOUT 10 SECONDS, STIR WELL AND SET ASIDE
CABBAGE WRAPS:
-DICED TOMATOES & SLICE CUCUMBERS AND PLACE IN SEPARATE BOWLS. SPRINKLE PEPPER ON TOP OF TOMATOES AND SET BOTH CUCUMBERS AND TOMATOES ASIDE.
-DICE MUSHROOMS, ONIONS AND CELERY. SAUTE WITH 1 TBSP GARLIC, PEPPER, 1 TBSP OREGANO, 1/2 LIME AND ALLOW TO FULLY COOK. ONCE COOKED, PLACE IN BOWL AND SET ASIDE.
-CUT CABBAGE IN 1/2, REMOVING LEAVES IN CUP SIZE FOR THE WRAPS WITH THE TOP 1/2 OF THE CABBAGE. THE REMAINING BOTTOM 1/2, CHOP AND SAUTE WITH 1 TBSP OREGANO, 1 TBSP GARLIC, PEPPER AND 1/2 LIME. ONCE SAUTED, SET IN SEPARATE BOWL OR MIX WITH MUSHROOM MIXTURE.
-PLACE COOKED SHREDDED OR DICED CHICKEN IN BOWL. ADD PEPPER, OREGANO AND LIME TO TASTE.
PREPARE ALL WRAPS BY USING THE LEAVE (CUP) OF CABBAGE AND FILLING WITH ANY AND ALL OF THE TOPPINGS (CABBAGE SAUTE, MUSHROOM MIXTURE, TOMATOES, CUCUMBERS AND CHICKEN) AND TOP OFF WITH PEANUT SAUCE. ENJOY!!!
