Fun For the whole family! Make your egg the One Eyed way! This is an all time favorite and one that is totally kid approved! 🙂 Instead of serving your egg on toast or with toast, why not serve your egg in toast! This is a classic easy breakfast. It takes a little bit more time than your typical protein shake and oatmeal but fun for the weekends when you may have a little bit more time to spare and more time to spend cooking up your breakfast.


INGREDIENTS:
-1-2 slices Whole Grain, high fiber bread (Ezekiel or Julian Bakery Bread)
-1-2 eggs
-1 tbsp coconut oil
-1/2 cup mix of fresh blueberries and blackberries
-1 banana
DIRECTIONS:
Melt coconut oil in a frying pan over medium heat.
Use a cookie cutter, shape of your choice, to cut a shape out of the piece of bread. You can also use the scooper from your protein powder.
Place the bread in the pan and fry it lightly on one side (you can also fry the cutout shape). Flip the bread over. Reduce the heat to low.
Carefully crack the entire egg into the cut-out hole in the middle of the bread. Cook for 2-3 minutes or until the egg is cooked to your liking. The option to cook on low on one side or flip half way and cook bread on other side.
Prepare fruit in a bowl and serve along side your one eye.
