INGREDIENTS:
-1 bunch arugula
-1/2 cup cashew nuts
-4 tbsp EVOO
-2 tbsp balsamic vinegar
-pepper to taste
-1 avocado
DIRECTIONS:
Prepare the arugula but cutting and discarding stems. Wash and dry the leaves. Set aside.
-Roast the cashew nuts in a pan with 1 tbsp EVOO until lightly browned.
-Toss the arugula with the remaining EVOO and vinegar. Add pepper. Slice avocado to the top of the salad and sprinkle roasted cashew nuts over top!
