1 cup old fashion oatmeal
1/2 cup unsweetened applesauce
1/2 cup canned pumpkin
3 egg whites or 2 egg whites and 1 whole egg
2-3 tbsp canola or flax oil
1 tbsp double acting baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp pumpkin pie spice
1/2 cup non fat milk or soy milk
2 scoops vanilla protein powder
1/4 cup oat flour
1/2 cup baking splenda
1/2 cup Splenda brown sugar (optional for tops)
1/2 cup dried cranberries or rasins (optional)
1/2 cup ground walnuts (optional)

-Preheat oven to 375. Line muffin pans with coated muffin paper or spray non stick cooking spray (pam) directly onto cooking pan.

-Combine oatmeal, pumpkin, applesauce, milk, protein powder, eggs and oil into bowl and mix until all ingredients are blended.

-Measure and mix all dry ingredients. Make a well into the center and pour wet ingredients into dry. Add dry fruit and nuts, if desire, and mix until dry ingredients are moistened. Fill muffin cups 2/3 full, sprinkle splenda brown sugar or splenda regular baking suar over tops and bake for 15-20 minutes until lightly browned on top.
