Ingredients:
- 1/2 cup precooked brown rice
- 1/2 cup water
- 3/4 scoop vanilla protein powder
- 1/4 c. non fat cottage cheese
- 1 dash ground cinnamon
- 1 dash ground nutmeg
- 1/4 tsp. vanilla extract
- 2 Splenda packets or another sugar substitute like Stevia
- 1 small apple, sliced
Directions:
- Mix cooked brown rice with water. Add vanilla and Cook over medium-low heat for 15-20, until begins to thicken. Once thickened, remove from heat and place in bowl. Allow to cool for about 5 minutes.
- In a separate bowl, mix non fat cottage cheese and protein powder and Mix well until there are no clumps.
- Add cottage cheese mix to rice mixture and mix well.
- In separate pan, saute sliced apples with cinnamon, nutmeg and sugar substitute such as stevia . Cook until begin to brown. Remove from heat and place over brown rice/ cottage cheese mixture.
