INGREDIENTS:
-2 egg whites
-1 oz of ground almonds (or you can use almond meal)
-1 scoop vanilla protein powder
-1 oz unsweetened shredded coconut
-2 tbsp water
-1 tsp baking powder
-cinnamon/Stevia to taste
*(optional toppings: almond butter and or sugar free syrup)
DIRECTIONS:
-Preheat pan sprayed with non stick spray (Coconut Spray works great for added coconut flavor)
-Mix all ingredients in a bowl.
-Pour pancake mix into pan andΒ allow to cook on medium heat, nice and slow (approx 3 minutes on each side)
-Remove from pan and allow to cool
*Optional: top off with Nut butter and or Sugar Free Syrup

These are delicious! Just to make sure I’m making them right, do you know how many Tbsps or how much of a cup = 1oz of shredded coconut?
Also, a general “coconut” question… how much coconut would you use to substitute for nuts or nut butters in other meals?

VS 2 tbsp of Almond or Peanut butter which is about 40-50 calories more and fat about the same… As for nut, all nuts are different so do the same to make your substitutions. typically you can have a bit more of the nut butter to equal the same amount of coconut bc the serving for coconut oil is 1 tbsp vs 2 tbsp in nut butter.

When I measured the coconut for the pancake batter I’m using 1 oz = about 1/3 of a cup shredded coconut. Does that sound about right?
