Hope everyone had an amazing Sunday.  Another great day to the new year.  I started my morning with a great cardio session and awesome visits with a few clients.  When I was headed home, I had to put my “FLEXIBILITY” to the test…  My car wouldn’t open.  I have an automatic open, once it detects my key but there was not detection therefore my car wouldn’t open.  I figured I left my key inside the gym and sure enough, it was nowhere to be found.  I know it isn’t in my car since my car won’t lock on its own so what the heck.  Anyways, still never found my key.  Michael came by, in the engine, to bring me his key but weird, the car wouldn’t open, even with his key!! the car is smarter than us.  Anyways I left my car at the gym and went to the station to pick up M’s truck. So needless to say, we have to figure everything out tomorrow… so weird! Those keyless entries and starts are suppose to be so much easier but sometimes they make life harder!! What happened to keeping this basic.  Our world tends to always want to improve technology but so often the basics are what always works!! What happened to the good ol key and lock!? Anyways, it was worth being able to get picked up by the fire station and taken off by rescue!! lol
Last night I made the famous cauliflower mashed potatoes that I posted in the recipe section! You will see in the above photos how I prepared them.  I love to get creative and all fancy.  What I did was clean out the inside of a bell pepper, placed it in the oven on broil and then added my cauliflower mashed to the inside of the pepper!! It was delicious but also a great way to present the mashed!  We also had a side salad with Ahi, also seen above.  I will post the recipe now.
