Clean healthy carbohydrates should make up a decent amount of your daily diet. Whether you are following a lower carb to higher carb diet, it is important to consume complex, high fibrous carbohydrates such as brown rice, oatmeal, yams, sweet potatoes, quinoa, whole wheat products, and fibrous carbohydrates such as green vegetables. One of my favorite complex carbohydrates, especially pre or post workout is the yam! Yams are a great source of energy and important antioxidant rich nutrients such as vitamins C and B-6. One of my favorite ways to eat them is in the form of “chips”. Not only are they extra tasty this way, they also satisfy my craving for real chips! You can make them sweet or savory, depending on how you season them! Check out my favorite simple recipes for both a Sweet and Savory version of the yam chip! With 20 grams of carbs and only 140 calories per serving, they make for a great carbohydrate to add to any meal, especially a pre or post workout meal. Sweet Yam Chips
1 medium to large Yam
3-4 packets stevia
1 tbsp cinnamon
1 tbsp coconut oil
Savory Yam Chips
1 medium to large Yam
1 tbsp olive oil
1 tsp garlic
1 tsp parsley
1/2 tsp sea salt
1/2 tsp fresh black pepper
Directions:
Cut Yams in 1/4 inch pieces. Place in bowl and coat with oil and seasonings (sweet or savory). Arrange slices on a baking sheet lined with foil.
Bake at 350 for 20 minutes then placing oven on broil and broiling for final 3-5 minutes to brown the tops. Flip chips and broin for another 3-5 minutes. Remove from heat once golden brown on both sides. Allow to cool and enjoy!
