1 cup wild rice
4 tbsp olive oil
1 cup carrots, sliced and diced
1 cup onions, white/red or both (sliced and diced)
1 cup celery, sliced
6 cups low sodium chicken or veggie broth
3 cups low fat soy or regular milk
2 cloves minced garlic
1 cup kidney beans (washed and drained)
1 cup black beans (rinsed and drained)
1 cup cuped chicken breast
sea salt and black pepper

Cook rice according to package directions and cook chicken until cooked through.

Saute veggies and oiived oil while rice is preparing.

In large skillet place sauted veggies, chicken stock and soy or regular milk together. Add garlic, beans and chicken. Simmer about 10 minutes. Add cooked rice and stir. Add salt and pepper and enjoy!
