Gina’s Blueberry Banana Bran Muffins
Ingredients:
-2 scoops Vanilla protein powder ( I use Devotion Nutrition Angel Food Cake Protein)
-1 cup wheat bran
-1/4 cup coconut flour
-1 cup unsweetened almond milk
-1 large egg
-4 egg whites-1 tsp baking powder
-1/2 tsp salt
-1/2 cup blueberries, fresh or frozen
-1/2 small banana
-4 Blueberry Sky Flex Flavors (optional but adds a touch of sweetness without the sugar)
-2 tbsp chia seeds
Directions:
Preheat Oven to 350 degrees. In a separate bowl, whisk together all dry ingredients. Add liquid ingredients (milk and egg whites) and banana, gently stirring until mostly combined. Fold in blueberries, then pour batter in silicone muffin cups or regular muffin try, sprayed with non stick spray such as coconut oil.. Bake about 20 minutes, until tops feel springy when gently pressed. Allow to cool and enjoy!
