Ingredients:
2 teaspoons olive oil
1 teaspoon crushed garlic
4 cups zucchini sliced in 1/2 inch pieces
freshly ground black pepper
1 tablespoon freshly chopped oregano
2 teaspoons chopped, toasted walnuts

1. Heat the olive oil in a  skillet over medium-low heat.
2. Add the garlic and cook for 1 minute.
3. Add the zucchini slices, pepper, oregano and sauté with the olive oil and garlic until the zucchini becomes tender, about 3 to 5 minutes. Remove from the skillet, sprinkle with toasted walnuts and serve.
