Store bought spreads and purees can not only get expensive but often they are loaded with unnecessary fats, calories, sugars and even trans fats. Save your money and calories and try this Walnut Bell Pepper Spread that is sure to satisfy both your diet and tastebuds. It goes great on anything from egg whites to lean protein dishes and even great on salads or eaten as is. This is also a great alternative to fattening dips or sandwich spreads. I even suggest using this as a mayonnaise substitute!  This is how we are able to make “eating clean a little more tasty” and a part of our Lifestyle Balance Plan!

Ingredients:
-2 red bell peppers, chopped in large pieces
-1 medium tomato
-1 tsp Himalayan Sea Salt
-Juice of 1 fresh lemon
-2-3 Tablespoons Olive Oil
-1 medium Carrot, cut into small pieces
-2 cups walnuts
Directions:
Place bell peppers and tomato in food processor or blender and mix until pureed to your liking. You can puree less or more depending on the consistency you desire.
Add sea salt, lemon olive oil and carrot into puree and continue mixing until completely mixed.
Add walnuts and continue mixing until walnuts are completely pureed and mixture is the consistency you desire.
Place in container and store in refrigerator for unto a week.
Goes great on anything! Great on all lean proteins, vegetables, as a dip, spread or even as a salad dressing. I even enjoy this as a cold soup. Enjoy!
