ingredients:
2 tablespoons low sodium soy sauce
2 teaspoons no sugar rice vinegar
1/2 juice of a lime
2 teaspoons stevia or splenda
1 teaspoon freshly grated ginger
2 tablespoons beer (yes beer, but it does add to the delicious flavor!)
2 99% lean turkey cutlets, usually about 3 to 4 ounces each
Directions
1. For the teriyaki marinade, combine the soy sauce, rice vinegar, sugar substitute, lime juice, ginger and beer in a small saucepan.  Cook over high heat until the mixture reduces by half. Let cool.
2. Place the turkey and teriyaki marinade in a plastic bag, seal tight and marinate for 20 minutes to an hour in the refrigerator.  The longer it can marinade the better!
3. Preheat the grill or broiler.
4. Cook the turkey on each side until it is cooked through, about 4 to 6 minutes per side.

(of course you can enjoy this with good ol chicken breast or fish too! 😉  Salmon is delicious with this teriyaki! 🙂
