INGREDIENTS:
-2 egg whites
-1 can Chunk Light Tuna
-1/4 c. celery, finely minced
-1/4 c. onion, finely minced (optional)
-1/2 c. oatmeal
-2 tbsp 0% Greek Yogurt (or Cottage Cheese)
-Pepper to taste
-1/2-1 tsp Tabasco
-1 tsp Dry Mustard seed
-1 tbsp minced garlic
-2 tbsp Horseradish Mustard (or regular mustard)
DIRECTIONS:
-Mix all ingredients together and mix well.
-Heat up Pancake Pan (mini pancake pan) or regular Pan with non stick cooking spray.
-Distribute Tuna Mixture evenly in Pancake spaces or if you are making a single pancake, add to saute pan.
-Cook on Medium heat for about 5 minutes on both sides, until golden brown.
-Remove from heat and enjoy!
**Can be used on whole wheat Bread, Ezekiel bread or Tortillas, over a salad or even by themselves!
