INGREDIENTS:
-4-5 oz Tilapia (I use Eat To Grow)
-2 cups cabbage (shredded or coleslaw)
-1 tsp jalapeño, minced (add a few seeds only for added kick)
-1 tbsp Olive Oil
-1 Roma Tomato, diced
-pinch of sea salt and pepper
-1 red bell pepper
Directions:
Simply broil Tilapia until golden brown. Broil bell pepper until chard then remove and allow to cool while you prepare the cabbage mix. Add all ingredients to pan and sauté until fully cooked and cabbage is tender. Peel skin off Bell Pepper and slice in half. Prepare dish by placing 1/2 of the bell pepper on a plate then top off with tilapia filet, cabbage mixture and other 1/2 of roasted bell pepper. Garnish with Jalapeño, if you wish, and enjoy!
