INGREDIENTS:
-2 egg whites
-1 scoop vanilla protein powder
-2 sheets Roasted Nori (Seaweed)
-1/4 cup Pure Pumpkin Puree
-1 tbsp Non Fat Greek Yogurt (2 Tbsp if using oatmeal/oat flour)
-1/4 cup Oatmeal OR Oat Flour (OPTIONAL- remove for Carb Free Versions)
-1/2 tsp baking powder
DIRECTIONS:
Place all ingredients into a food processor blender. Use hands to crumple up Nori sheets before adding to the processor.
Blend or Puree ingredients until well mixed and all Nori is combined and chopped into tiny pieces. (see picture)
Heat pancake pan (I like to use a mini pancake pan) on stove sprayed with non stick cooking spray such as pam or coconut oil.
Place batter into center of the pan or separate pancake spaces if using a mini pancake pan and cook on medium low. Cook until ready to flip and cook on the other side, approximately 3-4 minutes on each side.
Remove from pan and place on plate to enjoy!
Great by themselves or with a touch of your favorite nut butter!!
