stuffed sweet potatoe crisps
2 sweet potatoes
2 oz soft cheese (of choice) goat, mozarella, cheddar, etc.
1/4 cup fat free cottage cheese
2 tbsp skim milk ricotta cheese
1 green onion sliced and diced
-salt and pepper
-paprika, to taste
-Preheat oven to 400 degrees F. Scrub and prick pototoes and place in microwave or in oven until done. Cut the potatoes in half (lengthwise) and scoop out the insides into a small mixing bowl. Set aside skins.
-Mash the cooked potatoes with the cheeses and seasonings. Re Distribute the potatoe fillings into the shells. Top each with the sliced green onions and sprinkle paprika on top.
-place in oven for 10-15 minutes until hot and then place oven on broil and allow to crisp. Closely watch potatoes and remove when tops are brown and crisp.
