Ingredients
8 Roma tomatoes
1 tablespoons olive oil
freshly ground black pepper, to taste
1 clove fresh, minced garlic
Cooking Instructions
1. Pre-heat the oven to 400º F.
2. In a large mixing bowl, gently toss the whole tomatoes with the olive oil, pepper and garlic.
3. Spread out the tomatoes in a shallow baking dish in a single layer.
4. Roast the tomatoes for 30 to 40 minutes.
Serve warn over a salad, lean protein or by themselves!
