Ingredients:
-2 cups cabbage mix ( I used Asian Chopped Cabbage salad mix)
-7-9 cherry tomatoes. halved
-2 tbsp dijon mustard
-4 hard boiled egg whites
-2 hard boiled eggs
-1-2 tbsp water
-sea salt & pepper, to taste

optional:
1-2 stalks celery, chopped
1/4 cup white onion, diced

Directions: 

Place cabbage mix in large bowl with tomatoes and set aside. De shell eggs and place 4 egg whites and 2 whole eggs in bowl. Add dijon and water and use fork to mix until well combined. If you are adding celery and onion, add and continue mixing. Add salt and pepper to taste then add to cabbage salad mix, toss and enjoy!

*Can be subbed for lean protein + 1 serving fat meal.
