• 4 oz chicken breast, cut into bite size pieces
  • 2 stocks celery, sliced
  • 1/4 purple onion, finely diced
  • 1/4 c. non fat cottage cheese
  • 1 tbsp dried tarragon
  • 1 medium tomato, sliced
  • 2 tbsp slivered almonds
  • black pepper, to taste
  • 1/2 head of lettuce of your choice (mixed greens are my favorite)

Directions

Spray pan with non stick cooking spray(PAM) and place over medium-high heat.  Add the chicken pieces and cook until white throughout. Remove the chicken and set aside.
Blend cottage cheese in blender until super creamy. Set aside.
In a large bowl, combine the chicken, celery, tomato, onion, pepper, almonds and tarragon. Mix lightly. Add greens, Drizzle creamy non fat cottage cheese over top and continue to toss lightly.
