INGREDIENTS:
-1 Large cucumber, peeled and thinly sliced
-1 medium cantaloupe, de-seeded and cut into large cubes
-1 red onion, sliced into thin slices
-1 medium avocado, sliced into cubes
-2 tablespoons lime juice
-3 tablespoons cilantro
DIRECTIONS:
-Cut cantaloupe in 1/2, remove seeds and scoop out flesh, keeping “bowl” of cantaloupe intact.
-Place the cucumber, cantaloupe, avocado and red onion in a medium bowl.
-Season to taste with the lime juice.
-Garnish generously with cilantro leaves.
