Ingredients:
-1 cup dired apricots
-1 cup unsweetened shredded coconut
-2 cups almond flour
-1/2 teaspoon sea salt
-1/4 teaspoon baking soda
-2 large eggs
-1 tablespoon vanilla extract
-1 tablespoon coconut oil
Directions:
Preheat the oven to 350 degrees. LIne an 8 inch square baking pan with foil and oil the foil with coconut oil.
In a food processor, blend the apricots and coconut until combiners to a crumbly mixture. Pulse in the almond flour. Pour mixture into a bowl and add in remaining ingredients until well combined.
Use your fingers to press batter into pan and bake for 20-25 minutes until firm.
Allow to cool in pan for about an hour. Lift out by the foil and cut into squares.
