6 oz frozen shrimp cooked according to package
10 egg whites scrambled
1 cup uncooked brown rice
2 tomatoes, sliced
1/2 red onion, sliced
1 cucumber (sliced)
1 green bell pepper sliced
2 coves garlic, minced
1/4 black olives sliced
2 tbsp olive oil
3/4 tsp oregano
salt and pepper to taste
1 tsp fresh lemon juice

-place cooked shrimp in a mixing bowl and add rice and cooked egg whites

-Combine tomatoes, red onion, cucumber, green bell pepper, and olives in a bowl . Add the vegetables to the shrimp-rice-egg mixture and combine thoroughly.

-In a small bowl, whisk together the olive oil, oregano, garlic, salt and pepper and lemon juice and pour over the salad. Mix and regrigerate until serving.
