INGREDIENTS:
-2 medium red tomatoes
-1/2 red bell pepper
-1/2 yellow bell pepper
-1 medium cucumber, peeled
-1 stalk celery, finely chopped
-1/2 red onion
-2 tbsp fresh minced chives
-2 tbsp red wine vinegar
-2 tbsp lemon juice
-2 tbsp fresh pepper
-2 tbsp minced garlic
-2 tbsp fresh minced thyme
-2 tbsp EVOO
-8 oz, cooked shrimp
DIRECTIONS:
Simply mix all ingredients, except shrimp, and toss well. Add shrimp to top of salad and enjoy! Best if served in a martini glass for an extra delicacy~!
