INGREDIENTS:
-1 cup cooked shrimp, cut into bite size pieces
-1/2 cup red bell pepper, diced
-1 poblano pepper, diced
-1/4-1/2 cup cilantro
-1/2-1 cup almond cheese
-1-2 cups salsa, (mild, medium or hot) red or green
-1/2 cup green onion
-4 whole wheat tortillas
-1/2 cup green onion
**optional-1/4-1/2 cup diced black olives
DIRECTIONS:
-Preheat oven to 350 degrees.
-Mix all ingredients except cheese and salsa into big mixing bowl. Mix well.
-Place 1/2 salsa in cooking dish and set remaining salsa aside.
-Fill each tortilla with shrimp mixture and top off with a pinch of cheese.
-Fold tortilla and place in cooking dish, fold side down, on top of salsa.
-Continue filling each tortilla until all tortillas are gently placed in dish.
-Top off with remaining salsa and cheese. (If you are using olives, top off with black olives)
-Bake at 350 for 20-25 minutes until fully cooked and cheese is melted.
